RAW PLANTAIN SALAD

Persons: 4
Quranic Ingredients: plantain, onions, garlic, herbs, fruits, olive oil, salt.
INGREDIENTS
2-3 large ripe plantain, yellow skin a tiny bit soft to touch not rock hard
2-3 cups of mushrooms of your choice
kiwi and apple are additional but not necessary additions
1 medium Onions
1-5 cloves of raw garlic
1-3 teaspoons dry Cumin
1-3 teaspoons smoked paprika
½ – 1 teaspoon sea salt or Himalayan salt
1-2 teaspoons dry Oregano or more if it’s fresh
½-5 fresh green Chillies
12 Cherry tomatoes
1 cup of coriander/cilantro/Danyia leaves washed and chopped
¼ cup /75ml Juice of 3 lemons/limes OR apple cider vinegar
¼ cup olive oil
METHOD
• Chop the garlic and let it oxidise, this maximize the health benefits of the garlic. Leave at room temperature and allow it to sit for about 15 minutes. The contact with the air triggers an enzyme reaction that boosts the healthy compounds in garlic.
• While the garlic is doing its thing, wash and drain the tomatoes, herbs and plantain
• In a large salad bowl add the cumin, oregano, paprika and salt and mix together
• Add the acid; lemon juice or ACV
• Then add the oil, there you have your salad dressing
• Chop the tomatoes and add
• Peel the skin of the top of the mushroom and slice then add to bowl
• Pen-ultimately peel the plantain and cut into ½ cm slices or 1.5 cm cubes and add to bowl
• Gently mix all the ingredient together
• Finally chop the fresh coriander as finely as you like and sprinkle over the salad and fold in gently.decorate with fresh chives for visual appeal 🙂
