Ramadan Recipes – Hummus Partly Raw

I have a friend whose is one of the top raw foodies in the UK, Irena Arango and she showed me how to make completely raw hummus but that’s a bit long when iftar / breaking fast is in 15 minutes .This quick style hummus combines the best of both worlds and tastes amazing according to my loved ones, perfect for Ramadhan food

You will need

1 can of chick peas

1 table spoon of tahini paste

1 clove garlic (its Ramadan and people are going to the mosk)

2-3 tablespoon olive oil

1 tablespoon of apple cider vinegar ACV

2-3 table spoons of water 

pinch of salt and pepper

1-3 teaspoons Sumac powder for decoration and vitamin C 🙂

Last but not least 1 raw courgette/zucchini, makes it lighter

  • peel the garlic and let it oxidise, something happens as it react to air gets more potent
  • wash the courgette and dry and chop into big chunks
  • drain the can of chickpeas if you don’t have time to soak dried ones
  • add tahini, olive oil, ACV, chickpeas, courgette and garlic to the jug blender or you can use a hand held blender or mash it by hand, blitz
  • add the water gradually  and blend till you get texture you like, everyone is different
  • scrape into a bowl and with a spoon create a spiral in the humous dip and pour olive oil over it about 1-2 tablespoons then sprinkle sumak powder over it for taste, decoration and vitamin C.
