WHEAT FREE, SUGAR FREE AND LACTOSE FREE
These lovely pancakes can be used as your bread, starchy carbohydrate substitute, ideally eaten before 2pm so you can burn them off unless you are playing football or looking forward to a night of passion with your spouse 🙂
They can be eaten with sweet thing like dates or fruits or with savoury foods like veggie or dhaal dishes.

Ingredients
1 cup rice flour(not ground rice) you could use barley flour, millet,corn, oats, quinoa, teff flour
1/2 – 1 teaspoon cinnamon powder
1/2 – 1 teaspoon turmeric powder
1 1/2 cups soya milk/ water mix
1 egg or egg replacement powder
sunflower oil for frying
15ml of Manuka honey and juice 1/2 lemon
Method
• blend together ingredients together in order
• heat small non stick frying pan on medium high heat
• add 1-3 drop of organic sunflower oil and brush around pan
• add 1/2 cup of batter and tilt pan so that batter is not too thick
• as pancake babbles it is cooking underneath,
• use metal or wooden spatula to lift sides up and then turn over or for the wild at heart-flip the script – and flip it over
• cook other side
• make two pancakes and pile on top of each other, slice with pizza wheel and spread 15 ml of manuka honey between the sides, pour lemon juice over and eat straight away, let the colour bring some sunshine in your life this blessed day alhamdulilair
