I know I promised you ages ago for my wheat free pancake recipe…
well here it is,
Wheat Free Pancakes
INGREDIENTS MAKE 3 LARGE PANCAKES or 9 small ones
1 cup of wholegrain millet flour or amaranth, buckwheat flour, rice flour, cornmeal flour
1 cup of milk of your choice
1 egg or 1 tablespoon of flax seeds soaked over night in 1 oz of water
We like to season the pancakes, with thing like
1 teaspoon of ajwain seeds,
1 teaspoon of turmeric
1 teaspoon of cumin to have with spicy meals
OR
1 teaspoon of cinnamon
1/2 teaspoon of ginger powder
!/2 teaspoon of cardamom powder to have with sweet meals like honey and lemon
METHOD
Mix all pancake ingredients together in large jug or bowl
You need a non stick frying pan , a tiny one or medium size, oil and a wooden or metal spatula
Place on cooker on medium heat
Add 1/4 of a teaspoon of oil and tip it around the pan or brush it to make sure the pan is cover with a think layer of oil
using a tablespoon or small ladle add 1 table spoon to the tiny(10cm) pan and 3 table spoon to medium size pan.
after 1 minute of cooking on medium heat, , using the spatula, lift the sides of the pancake all around, as it cooks you will be able to get the spatula right underneath
when you can easily get it underneath ,m either flip the pancake in the pan up in the air or use an egg frying spatula to turn it over and cook the other side for 2-3 minutes
Place pancakes on clean water plate or wrap in clean tea cloth or grease proof paper.
You can keep in the fridge for 24 hours to use later but make sure they are wrapped up and re heat in the pan , just warming a minute on low heat on either side
