Pumpkin Spicey Smoothie

This is really exciting, we haven’t had raw pumpkin in a smoothie before, last year from my book , Heavenly Bites, we made a lemongrass and pumpkin soup.My raw food guru, Amir Abdullah Al Bey suggested that we could have done it raw… we weren’t ready but a year later here we are and  ready to go. A few of Team Cuisina and doing this 3 day juice fast as well as 40 brave souls from Facebook.

This is what we are going to do with the squash/pumpkin

Ingredients

1 cup(234ml/40z) washed, peeled and grated pumpkin

1 cup (234ml/40z)washed, peeled and grated carrots

1 strand of frozen/fresh lemon grass

1 cup of almonds soaked over night 12 hours, rinsed, blended with 500ml of water and strained, the milk used

1 tsp turmeric

1 tsp cumin

1 clove garlic

1/2 handful coriander

1/2 handful parsley

3 cm fresh ginger chopped

black pepper

 METHOD

  • Soak almond overnight 12 hours at least, rinse and blend with water, strain and use the nut milk.place in blender.
  • wash peel and grate pumpkin/squash , add to blender.
  • add cumin, tumeric,pepper, lemongrass,ginger,garlic.
  • BLEND BLITZZZZZ
  • Add fresh chopped herbs;  parsley corriander
