WHAT I EAT A DAY BRUNCH BEANS PANCAKE SALAD

as salaam alaikum brothers and sistars, this meal provides wheat free and meat free alternatives.

Curried beans, khichi flour (green bean and rice flour) pancakes and salad with grove dressing.

RECIPE WHEA TFREE PANCAKES/BLINI

Ingredeints
*1 cup of flour , you can use teff, sorghum, rice, barley, millet, quinoa, oats, etc
* 1 cup of milk, we use home made nut milk, use whatever you can afford
*1 egg, insha’allah we will do vegan option
* 1 tsp-1 tbsp depending on your taste and health issues spices
METHOD

*Mix all ingredients
*place small frying pan on low-medium heat (less than medium)
*grease a small frying pan with brush and brush olive oil around
* add mixture to 1/2 cm deep
* cook slowly one side 3-5 minutes
*when you can easily lift the pancake using flat knife, spatula then flip over and cook other side for 3-5 minutes
* serve instead of wheat bread

CURRIED BEANS

Ingredients
*1 can of baked beans
*1-3 onions
*20-30ml olive oil
*10-30 ml curry powder to taste/home made

Method
*fry chopped onions in olive oil till golden
* add curry powder
*stir curry powder into onions
* add baked beans and stir
* cook on low heat till cooked thru and serve with salad and pancakes
