Working late and can’t break fast on time? Got up late and its nearly time for Suhour? this cake is the answer to your problems, a slice of this handy cake is packed with all teh goodness you will need to bring you back to life or get you through the day with a glass of milk.
This cake is packed with nuts, dates and bananas so I thought it would be a great thing to eat if you get up late for suhour and need to eat something nutritious to eat in a hurry…Or you could wrap a slice or two and take it to work to break fast with a glass of milk or juice. this cake packs a punch and inshallah a couple of slices will get you through the day inshallah. Ideal for using up bananas that you’ve kept for a bit too long.

NUTMEG NOTE
This recipe contains nutmeg, there is a difference of opinion on the use of nutmeg, when used in large quantities it has an effect on the body similar to the intoxicant hashish. Although it’s banned from being imported as a single spice ,into Saudia Arabia, it is permitted to be imported into Saudia Arabia when mixed with other spices in less than 20%.
During the eighth conference of medical fiqh – “The Islamic View on Some Health Problems – Haraam and Impure Substances in Food and Medicine” – which was held in Kuwait between 22-24 Dhu’l-Hijjah 1415 AH (22-24 May 1995),Shaykh Dr. Wahbat al-Zuhayli said:

“There is no reason why a small amount of nutmeg should not be used to improve the flavour of food, cakes and the like, but a large amount is haraam, because it is a narcotic.”
Ingredients
½ cup 115 grams 4oz butter or margarine
½ cup 100grms 4oz sugar
1 cup 125grms 8oz self raising flour
2 eggs
2 very ripe bananas
14 dates, stoned and chopped
½ cup 50grms 2 oz of pecan nuts crushed
1 ½ cup150 grams 5oz of walnuts crushed
1 tsp 5ml cinnamon powder
1 tsp 5ml mixed spice powder (nutmeg, clove, aniseed)
1 tsp ginger powder
1 cup 8 oz 235ml of milk

METHOD
Pre-Heat the oven to gas mark 4; 180C, 350 F
• Grease a 2lb loaf tin with a little oil or butter and piece of kitchen tissue, rub it all around the inside of the tin.
• Mash the bananas with a strong fork in a bowl or large jug.
• In a separate bowl cream the butter and sugar together and mix in the eggs
Mix the mashed banana into the butter and cream.

Then mix in the flour, cinnamon and mixed spice. The nuts and dates tend to make the mixture really thick, so thick you may not even be able to use an electric whisk on it,
• Add ½ cup of milk and mix by hand with a large wooden spoon, then add the remaining ½ cup of milk.

Scrape into a greased loaf tin and bake for 40 minutes then lower the temperature to gas mark 2; 150C and cook for a further 30 -60 minutes. (Keep prodding with sharp knife, when done the knife should come out of the cake reasonably clean)

Let it cool in the tin before you turn it out on to a rack or grill rack something that the air can circulate around it
When cool, sprinkle with icing sugar and slice and eat, you could have it cold with custard or with a glass of milk before you begin fasting…and remember to make the duaa before fasting inshallah you’ll make it through the day with loads of energy
