• chicken breast 1 per person, ask your butcher to slice it
• seasoning, you can buy chicken seasoning in a bag
• lettuce shredded
• cherry tomatoes
• cucumber slices
• onion rings/chopped
• salad dressing
• whole meal pitta bread
• chicken seasoning 

1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon black pepper
1 teaspoon cardamom
1 teaspoon saffron(optional)


• wash chicken and drain
• sprinkle both sides with seasoning and leave for at least 15minutes or all day in fridge in covered plastic container
• heat griddle high then turn down low then pour 10ml of sunflower oil on griddle and tip from side to side to distribute even or use pastry both
• with griddle on low heat place chicken and leave to cook while you do your magreb , about 15minutes
• then turn over and cook for 5 minutes while you make salad
• grill pitta under grill 2 minutes
• slice pitta open and add lettuce then meat then cucumber and onion, pour salad dressing over then scattered tomatoes
• add ketchup, sweet Thai chilli sauce or even Encona or Reggae Reggae hot pepper sauce
• hmmmm nice!
