Carrot Salad
It’s a Creole thing, no its an Asian thing, no its an Arab thing to eat carrot and onion salad with curry or tagine, over the years my version have become more delightfully enhance , praise The Creator for the access to new seasoning and method and influences
Ingredients
- 1 red carrot, grated, use normal if you can’t find red
- 1 lemon juice and rind
- 1 onion chopped
- handful of fresh coriander , chopped
- dry roasted sesame seeds
- dry roasted cumin jeera seeds
- 2cm piece of fresh ginger chopped fine or crushed in garlic crusher
Method

- wash carrot, then grated
- wash onion. peel and chopped fine
- wash coriander, chop fine
- mix together in bowl
- dressing, mix lemon juice and rind, add chopped ginger
- dry roast seeds in dry frying pan till sesame seeds pop, you may need to cover, then add to juice
- mix into carrot onion herb salad
- serve with curry, tagine or other salads and juices
