NO SO NICE RICE

IF ITS NOT STORED ABOVE 56 DEGREES OR LESS THAN 10 DEGREES COOKED RICE WILL GIVE YOU BELLY AND HEAD ACHE

You can get food poisoning from rice if you don’t store it in the fridge after cooking.

What makes you sick is the bacteria Bacillus cereus, says CSIRO food microbiologist Cathy Moir. These bacteria produce toxins that will give you a mild vomiting illness shortly after you eat the contaminated food (sometimes it only takes 30 minutes to get sick).

Bacillus cereus is commonly found in the soil and sometimes in plant foods that are grown close to the ground – such legumes, cereals, spices etc… and it reproduces in cooked rice millions by teh second if lefted at room temperature.

If foods are cooked and handled correctly Bacillus cereus isn’t a problem, but in dry conditions – such as those found in a rice packet or spice container – Bacillus cereus remains present as spores. The spores remain dormant until you add water, then presto they germinate and grow.

Unfortunately the cooking process doesn’t kill the heat-resistant spores or the toxin produced so once the rice is cooked the bacteria grow and thrive in moist, warm environments.

so if you go to an event and you see rice  not refrigerated or heated while waiting to be served…do not eat it!

My parents have always refrigerated (or discarded) everything that wasn’t eaten right away. I have a very low tolerance for foods tainted by open air or bacterias, and get sick quite easily. That being said, I just want to let you and your readers know that I have been consuming rice left in the pot (covered), pot left in the stove up to three days… Without so much a tingle in my stomach.. Or head. I dunno where the research was done for this information but I can tell you from my standpoint it doesn’t register as accurate. I have paso fed it to my family and pretty much all of my friends. Everyone comes to my house to eat my Indian food/ leftovers since I always cook enough to feed an army. Just FYI I didn’t grow up with the habit of storing the rice unrefrigerated… I learned it in another Indian American home, and I was shocked out of my shoes thinking it was the coolest thing ever, because my germiphobe mother would have never believed that. Well it is the coolest thing ever, and it hasn’t EVER made me/ myfriends/ my family sick. Now… After day three… And I mean right after… Just throw it out!

    1. in your attempt to discredit me, i will tell you where i got this information from, i have studied and paased an exam and have a certificate from the royal society if environmental health in hygiene and food safety, mashallah. there is ample scientific information on line and otherwise ti confirm what i have been taught and what i have written about for the benefit of others to be true, its ignorant to think that just because one person doesn’t suffer from ill health due to some thing, that a thing that is known from scientist and middle eastern house keepers to be treated carefully, in wrong. So here goes…

the evidence that if you, most people, don’t refrigerate rice you will get ill
