FAT FAIRIES CAKES

Every so often a little bit of what you fancy does you good, so we made fairies cakes for the children at our local Jubilee Street Party, we used British beetroot and inshallah that recipe is coming soon, for now here’s a lovely little recipe to keep you going .

These yummy fairy cakes are like a chocolate orange sweet and fairy cake, combined with my signature touches, you are onto a winner if you make these for a tea party inshallah

INGREDIENTS

170G BUTTER OR MARGARINE
170G SUGAR
170 SELF RAISING FLOUR
3 EGGS
1 HEAPED TABLE SPOON GOOD COCOA POWDER NOT DRINKIGN CHOCOLATE
zest 1 orange zest
1/2 tea cinnamon powder
1/2 tea ginger powder
METHOD
Cream together butter and sugar
Add eggs
Blend
In a separate bowl put flour, take out 1 table spoon and add 1 heap table spoon of cocoa, through a sieve, shake over bowl with eggs then blend using whisk.
Using a soup spoon place mixture in cake papers in cake tin, you cannot do this without the tin, you need the tin to support the cakes while the mixture is runny.

Oven gas mark 5 for 10-15 minutes, on the top shelf 12 minutes, i noticed if you put them straight in on middle shelf they don’t rise so much,, so they are flat fat fairies cakes, it takes all sorts, but to do real fairy cakes they need to rise, inshallah wait and see.
let them cool.
Using tip of sharp knife take tops of cakes, you need cakes to rise for this
gently cut piece in half and set aside, this is the wings
Using butter icing place in piping back or you could just spoon some in the middle of the whole and place wings in, cut side in the centre facing each other, decorate with fruit, sprinkle etc
