Salmon and Herbie Tattas.
“I’ll just have one of those small halal chicken burger and chips for tea”.
As we drove a little further, the rain and hail stones threatening to downpour again I thought better of it and decide to have grilled salmon and home made chips for tea.
Once inside the comfort of my kitchen I thought better of the chips, this is our offering.
Griddled salmon steak
Herbie mash potato, made with dried tarragon , parsley fresh(use dry if you don’t have fresh) , soya milk, Himalayan salt and black pepper.
Salad with black mustard , garlic, honey, olive oil and apple cider vinegar dressing.
If you haven’t used a griddle before, place on heat and turn heat up high for about 3-5 minutes, drizzle lightly the pan with sunflower oil and brush or swivel pan from the handle to make sure oil is all over the cooking ridged surface.
Turn heat down real low and place fish, skin side down on griddle, sprinkle with sea salt and black pepper whatever season you like, could be chili, cumin,dill, etc.
Leave to cook for 5-10 minutes depending on how well cooked you like it.
When it’s cooked you should easily be able to get a knife underneath it and turn it over to cook other side.
serve with mash and salad , a health nutritious alternative to fish and chips
P.S. I should add, if there is any leftover mash and potatoes you can always make salmon fish cakes.
