PERI PERI SPICE MIX Originally Portuguese.

Scotch Bonnet Peppers

Dry Piri Piri dry  mix

1 teaspoon of the following, add more of less chilli for your taste

Paprika
Chilli powder
Bay leaf powder
Pepper
Garlic powder
Onion Powder
Lemon salt

METHOD

combine ingredient , brush meat with sunflower oil and sprinkle dry powder mix over and massage with hands, then BBQ roast of grill

Chilli paste in tube-harisa 
Lemon zest/rind
Lemon juice
Olive oil
Garlic cloves crushed or paste
Red pepper paste (Salt
Bay leaf powder

METHOD

Combine ingredients , spoon and few  table spoons on to meat  and massage with hands, leave covered in a cool place or fridge for a few hours.This is called marinating;the spices soften and infuse the meat.

Then BBQ roast of grill, keep left over in fridge with olive oil covering 1/2cm surface.
