Salada Tricolore
I love going to little Italian restaurants, I don’t mean the local pizza hut but real Italian where the starter is a mezze of amazing anti pasta dishes like pickled artichokes, salty olives and appetising asparagus. I lived in Rome for a year, Parioli to be precise and have been blessed to eat at some of the finest restaurants in Rome itself mashallah. I would always order this salad, traditionally its supposed to have avocado slices instead of cucumber. We don’t have any today but we do have freshly cut basil. Dressed with balsamic vinegar and Portuguese olive oil, once again I am kissing the summer good bye till next year inshallah.
