while tidying the fridge today i notice there were a number of leftovers i needed to use up, including roast potatoes,i love breaking my fast after dates and water, with pakoras
CHOP ROAST POTATOES IN BOWL AND ADD CHOPPED FRESH CORIANDER, SALT AND PEPPER
ADD 1 CUP OF CHICK PEA / GRAM FLOUR, WHICH IS 100% PROTEIN UNLIKE NORMAL WHITE FLOUR WHICH IS NEARLY 100% STARCH
ADD 1 TEASPOON OF CHILLI OR ETHIOPIAN BERBERY, 1 TEA SPOON OF BAKING POWDER
ADD 1/2 CUP OF WATER AND MIX TOGETHER
PUT IN PLASTIC CONTAINER AND LEAVE IN FRIDGE TILL READY TO FRY
HEAT OIL IN WOK OR KERACHI TILL BUBBLING AND ADD 1 LARGE SOUP SPOON OF PAKORA MIX
DEEP FRY BOTH SIDES 5 MINUTES EACH SIDE
TAKE OUT WITH SLOTTED OR MESH LADLE AND DRAIN ON KITCHEN PAPER
I LIKE MINE WITH CHILLI AND BRINGAL PICKLE AND LOADS OF FRUIT JUICE
