As as foodie and food writer, I love food shops, I love shops from different cultures, races etc, that sell food or anything relative to food. To my delight, off Edgware Road, in London’s Arab West End, is a wonderful, gorgeous actually, shop called Green Valley, like the Aladdin’s cave of Middle Eastern cuisine, a mini supermarket, I know that’s a contradiction but it is a small supermarket.

 There are courgettes already hulled out, for fancy housewives with fake nails, that are too busy to do it themselves, there are cheap kitchen utensils you can do it with, there is an amazing ” don’t let me go there” baklava section, a wonderful meat section that sells every from seasoned lamb cubes for kebab to skinned halal bunny rabbits……aaah!

An amazing array of fruits and veggies; exotic and conventional, every sort of pickle you would want and a tasty, fresh buffet Middle Eastern mezze take away section.

Vegetable Lasagna

In my process of eating less meat and reviving the following Islamic Sunnah, where the prophet Muhammad, peace and blessings of the Creator be upon him, didn’t eat meat for as much as 2-3 months out of choice. I had to return to my Rasta days in which I was pescatarian, vegetarian and even vegan. This back in the daze recipe is combined with my now wheat free days .

INGREDIENT

Sunflower oil for cooking, please do not destroy your olive oil by cooking it, it’s great for dressings food after its cook or dressing salad, veggies etc but not for cooking.

1-2 packets of lasagne OR of free from wheat lasagne, available from health stores and super markets

1 packet quorn mince, does have traces of eggs so could be replaced with soak red lentils

3 small onions

Garlic, as much as you like

3-5 carrots

1-2 courgettes

1 tin of tomatoes

1 cup of water

1 tea spoon of basil, anti-inflammatory (good for sore throat, arthritis) and good for your heart

2 teaspoon of oregano, high anti-oxidant so helps anti-aging just look at all those youthful Italians and Palestians.

1 tea spoon black pepper ground helps digest food

1 level tea spoon of sea salt

1 can Campbell’s condense mushroom soup OR 1 carton of soya cream

1 cup of fresh mushrooms

1 cup spinach, frozen or tinned

METHOD

BOLOGNESE SAUCE

  1. I find with gluten free lasagne that tis a bit wavy and the sheets are not straight, maybe it was just the one we bought? So soak them in boiled water with 1 dessert spoon of oil stirred through it before adding pasta to stop pasta sticking together. The regular lasagne is usually not need soaking as it very straight
  2. Place 1 dessert spoon/10ml sunflower oil in large frying pan  and turn on medium heat
  3. Add chopped onions and sauté gently stirring occasionally
  4. As onions golden add garlic and cook for a few more minutes
  5. Add quorn mice of drained soak red lentils, stir and fry for 5 minutes
  6. Then add peeled and grated carrots, stir and cook for further 5 minutes
  7. Add oregano, basil, black pepper and salt, stir, you can be a bit Heston Blumenthal and add in a bit of star aniseed but not necessary.
  8. Add tin of tomatoes and stir in
  9. Add 1 cup of warm water bring to boil and turn down low and simmer covered while you make the other sauce

SPINACH AND MUSHROOM SAUCE

  1. Peel and chop/crush garlic .I was reading somewhere that if you crush chop garlic and leave it for a few minutes to oxides before adding it to anything or anything to it, then it benefits your health contrary to out dated common opinion. If you give your chopped/crushed garlic time to sit before changing its temperature (through cooking) or its pH (through the addition of acidic food like lemon juice), it will give the alliinase enzymes in garlic an opportunity to work on behalf of your health. Leave garlic
  2. Washed and take skin off mushroom heads and chop mushrooms, head and stalks
  3. Add 1 dessert spoon/10ml of oil to another frying pan, medium heat add garlic and stir around to infuse the oil for a minute or two, then add mushrooms, whizz them around briefly they don’t need to be thoroughly cooked, add either tinned of soup or soya cream or diary cream and stir, add a pinch of salt and ground black pepper to taste. There you have sauce number two  without spinach
  4. Additionally add frozen/tinned spinach or fresh but it takes more time. Stir into mushroom cream sauce and cover let it cook for 10 minutes. Voila spinach and mushroom cream sauce.

 

BACK TO LASAGNA

Preheat oven gas mark 5/

  1. Get baking tray ready. 1 packet of lasagne does a bread tin size baking dish ad 2 packets does a larger one that would do a roast chicken in.
  2. Drain lasagne pasta and separate sheets and rinse in cold water, you will have to be quick now.
  3. Place a layer of pasta on base of tin, you will need to overlap piece and break pieces etc, time to get creative.
  4.  Then a layer of Bolognese sauce about 1/2” just under 1 cm thick , spread it out
  5. Then another layer of pasta
  6. Then layer of spinach mushroom
  7. Keep layering till you read top of baking tray
  8. Finally a layer of grated renin free vegetarian approved cheese, loosely cover with foil.
  9. Baked in pre-heated oven, gas mark 5/190C/375 F fairly hot, on middle shelf for 45 minutes or till tender when you put a skewer through it.
  10. Serve with salad and enjoy
  11. Uou can even let it cool down and freeze chunky slices

Bengali 5 Spice

You know sometimes you get fed up with the same ole, same ole, even though it’s nice, well that’s how I feel about dhaal, red lentils.

When we do our FEED THE NEED, Feeding The Homeless In Central London, one of our sistars cooks an  amazing dhall and spinach curry.

If I remember rightly it’s seasoned with onion and garlic, turmeric/haldi, chilli and cinnamon, its lovely. However there comes a point where you are fed up of this spice combination which seems to be, with all respect due, an everyday combination.

Still on my NO MEAT FOR 365, I have been revisiting recipes from my Rasta days and trying on new things.

Today was no different,I had a friend coming over to help me cook , taste and clear up, herself an avid vegetarian, plastic shoes an all…what could we do with these blooming lentils that was a little bit different? And then I discovered “Bengali2 Spice Mix”.

D.I.Y. it’s not from a packet honey, you have to get this little beauty together on your own. Here we go; good old cumin seeds, fenugreek, fennel, sesame and mustard seeds.

FOOD MEDICINE

As foreigners , particularly those of us of Asian and African descent,(that’s all of us really)  we don’t eat all this spicy food just for the fun of it, just for the taste. In places where there are no pharmacies, and no doctor, then  food is prevention and cure.

Today is one of those days, I can feel some virus trying to take over my system, bad headache , more mucus in my nasal throat cavity than is normal, a few spots eruptions on my normally clear skin………..hmmmm time to get out the big guns……berbere.

Berbere (Amharic: በርበሬ berberēTigrinya: በርበረ berbere) is a spice mixture whose constituent elements usually include chili peppersgarlicginger, dried basilkorarimarue, white and black pepper and fenugreek.[1][2] It serves as a key ingredient in the cuisines of Ethiopia and Eritrea.

These spices are soaked in tejj, a honey wine and left in the sun for the alcohol to evaporate off and soaked again, this process is repeated three times….how do I know? I used to be a waitress in an Ethiopian restaurant .This spice is great mixed with pulses and is especially good when you feel a head or stomach cold coming on….It will certainly make your nose run and get the blood following, encouraging the the toxins and virus to get out because they are unwanted. Abstain from meat and diary for at least a few days  and insha’allah this virus will move on to a more toxic habitat.

Keep up the vitamin C, loads of kiwi fruits and papaya, strawberries and oranges and every little thing gonna be alright

Well I am not strictly a vegetarian however i am promoting the sunnah that the prophet Muhammad  peace and blessings of Allah didn’t eat very much meat, perhaps only once a a month.

Before embracing Islam I was a Rasta and went through dietary stages of being pescatarian, vegetarian and vegan, more for  health reason rather  than being sensitive about animals begin killed though very much aware that it takes loads of vegetation for feed animals for meat and that grain etc  could feed a lot more humans

FEED THE NEED DECEMBER 2012

As salaam alaikum, We regularly  have been going out on the streets feeding the homeless in central London since the end of Ramadhan. We are not yet a registered charity  we cannot do that unless we have an income of £5,000  and that’s why we need your help.Once we get charity status we can tempt you with things like Gift Aid .

We have a constitution  and are in the process of registering as a non profit company.

Homelessness knows no boundaries, it doesn’t discriminate between races and religions , skin colours or sexual persuasions.

The charity CRISIS will be out on the streets inshallah every day from 21st December, all over the holiday season. however before then its still freezing and we would like to go out again on Friday 14th December.

FEED THE NEED, feeding the homeless in Central London…..Spare a thought today  as you are wrapped up under your snuggley duvet with the heating on that there are poor souls out there sleeping in shops doorways in this freezing weather,

Imagejust £5 means a couple of them get a hot healthy wholesome meal before they bed down for the night.we make best lamb mince chilli con carne with rice and vegetables or our veggie option is curried lentils with spinach, rive and vegetable and they get a kiora drink as it doesn’t have too many nasty E-numbers and fake sugars.

inshallah we are going to be asking again soon….. It was freezing outside tonight by the time we went out to give out the food cooked by our all star volunteers with donations of money from good people like yourselves BUT to make this more regular we need money OR

 we need a large pot that can cook enough rice for 100 people, we need 2 patio gas canisters, we need long grain rice, we need kiora drink, nothing cheaper they are full of chemical and you do not give in charity that which you wouldn’t accept with your eyes closed, we need tine tomatoes, we need lentils, alhmdulilah we have meat for a couple of months Inshallah alhmdulilah, what can you do, please email me, karimahscuisinaa@gmail.com

Alhamdulilah, praise the Creator, last night we did FEED THE NEED again on the streets of Central London, it was freezing, I do not want to imagine what its like to sleep out there, please we need your donations to go out again before Christmas, the charity CRISIS will be out every night from 21st December onwards inshallah but it is really freezing right now and they need hot good food,

one homeless man last night came up to us and said “that was quality, now I’M READY TO GET MY CARDBOARD AND BED DOWN FOR THE NIGHT”
